Latte plays an essential role in coffee beverages, Master Chuang said.

Coffee Talent Course invited Mr.  Chuang, Master of Coffee, to give a coffee lesson on 18th of April 2017. Master Chuang taught students how to make an espresso. Master Chuang mentioned that if students wanted to run their own business, then service experience could be important part. It is because we must understand what flavour customer prefer and what they like. In Taiwan, the supply in coffee business has been more than demand, so we should keep asking ourselves to improve, Master Chuang said.

Master Chuang also pointed out some differences between various styles of coffee. For example, there are some common styles of coffee, Americano, Café Latte and Cappuccino, and they are combined with different amount of milk. Firstly, Americano is only contained one shot of espresso and some hot water without any milk. Second, Café Latter is 1/5 espresso, 2/5 milk and 2/5 form. Finally, Cappuccino is 1/3 espresso, 1/3 milk and 1/3 form. Therefore, Cappuccino is stronger than Café Latte, Master Chuange said.

Latte plays an essential role in coffee beverages, Master Chuang said. The ingredients of milk are water, protein, lipid, carbohydrate, mineral and etc. and the most important ingredients are protein and lipid. In terms of making milk form, protein can be seen as the framework of the milk form and lipid can be the part to decide the flavor of coffee. Master Chuang demonstrated the process of brewing the espresso, frothing the form, and pouring the form. In the process, Mater chuang emphasised that frothing is the key when making a cup of coffee. Not only students need to pay attention on the temperature of the froth, but also need to be careful of the moisture and the pace of frothing.

Is coffee better with latte, a student asked. Once you tried all types of coffee, then you would find out, Master Chuang answered. Another student asked about what kind of machine they could practise by themselves? Master Chuang said that it is better to have a standard machine to make a decent form, however, practice is always the way lead to success. If students are willing to practise coffee technics, there are some standard machine in our department that students can borrow, Chair Lin, Department of Leisure and Recreation Management stated.
